Temper
To temper is to carefully raise the temperature of an ingredient to prevent it cooking. This is done by adding small amounts of a hot liquid or ingredient and stirring and finally adding the ingredient to the hotter mixture to continue cooking. Tempering is also a process used to heat and then slowly cool and work chocolate to give it a shine and a snap and to prevent streaks.
